Unlike r*peseed and, to a lesser extent, sunflower oil it has a definite taste and smell that makes it feel richer, and also tends to compose rather well with most savory dishes. It makes it easier to make "meh" ingredients taste good essentially.
Really though, olives are one of the ingredients that really benefit from being high quality, might be you've been having shit-tier ones. Also black ones are easier to get into due to having less of a bite to them
I've recently switched over to avocado oil. It has a higher smoke point and doesn't degrade as fast as olive oil. I love it, and since I never deep fry anything, it's not really expensive.
