At the risk of airing my autismo-parinoia, Mullvad and ProtonVPN seem to be two of the best privacy oriented ones. I use Mullvad and it was pretty easy to setup and use.

Mullvad is pretty good. They accept crypto and cash (by mail) IIRC, if you don't want to use your CC.
