I got gifted a box of liquor older than I am
It's great but I'm unironically upset that this wine lasted over 20 years in a cellar meanwhile my homemade wine can barely make it a year without souring
I’m gonna be honest, I never tried to brew anything. I just have some experience about a decade or so ago with wine collecting, really was my then fiancé‘s thing and she was SUPER big on the temps being right. We bought one of those bachelor fridges, you know what I mean, looks like a cube, cause you can set the frickers to 50 and they really ever only get close to 55
Anyway, we used to buy like two “great” bottles a year, that were maybe 15 years vintage or whatever, you know, like 200 dollar bottles, but we fridges aged to keep them good for the whole year till the following holiday. We did that for like four times till we broke up. Was good wine tbh, never went bad

If your wine isn’t lasting a year, it’s being stored above 60F. Stop that.
Edit- I mean to say there’s a reason wine CELLARS exist. Cellars usually are about that temp if they’re large enough and have no windows.
edit2- I guess if if you live in some place grapes don’t grow, adjust to ensure that temp, or even maybe a bit lower, like 55 or so.

It's in a cellar. I just really sucked at stabilizing and bottle carbonation (painted the entire cellar with apple mead once. 30 bucks wasted).
I just gave in to big home brew and now I buy wine stabilizing packet things. No more vinegar and no more bottle bombs
