I recently made some delicious breaded chicken breasts. I marinated them in buttermilk with sriracha and seasoning mixed in for a day. After that, I egg-washed them and coated then with a mixture of bread crumbs, smoked paprika and rosemary.
They were good! The meat was very juicy and delicious. As far as the breading, they just weren't quite as good as I'd hoped. Maybe part of it was that I didn't flip them halfway through? I'm just not sure how to get them crispy. Can they even get that way if they're skinless?
