I've experimented with using a baking soda solution to accelerate the mallard (:platypsyduck3fast:) reaction. It worked but messed with the flavor so wasn't worth it.

There's some recipes for chinese stir fries out there that use baking soda to tenderize the meat, but if you forget to carefully rinse it off before cooking it, it tastes pretty bad.
