Ramayana and Mahabharata. Vedas are mostly collections of hymns they make even dryer reading than upanishads.

Katha and Briadaranyaka are pretty interesting as long as you have commentaries on them tbh.
Also anything from Wisdom is generally high quality for Mahayana and Theravada buddhism
