Meanwhile I was at this cafe a couple of weeks ago where an Indian dude was going on giving a trillion orders to the server and then walked right into the kitchen. Dude wanted his avocado sometjing exactly how he wanted. Once he stepped out we could hear the cooks and wait staff cussing hi behind his back for being such a picky jerk. I assume you are white. I used to work as a waiter while in college, and I hated serving Indian customers. They would snap their finger at me, would drive me insane. And they give very little tips, if they tip at all. Maybe like in India, they feel they should be nice to the firangi while it's ok to be rude to their own.

OP says he's an American, so they're probably talking about serving Indian immigrants in the US, where it's customary to tip, but Indian immigrants have a reputation for being "cheap" and not tipping. American servers consider tip a right. In India the servers are expected to serve portions on the plate and then come back when that’s devoured. All that service and tips are still not customary. In America, tips are demanded and not expected.

Portions in the US are usually too large for me (about double the average portion served in India). Most of the time we end up splitting a dish between a couple of us, or we need a takeout box.
