I never understood this scene because 2 mirrors pointing at each other produce this effect in the real world, so how does this show anything special? just the fact that she made the mirrors?

She made them in the dream world. Then pointed them at each other, which was supposed to have some dramatic effect and be an impressive show of her ability to construct things in the dream world, but all she did was make two mirrors.
It would be one thing if she then walked into the mirror world, breaking natural laws of physics with her imagination alone, but no, the mirror just shatters and they move along.

Part of the point is if you frick with reality too much the subconsciousness becomes aware of it. The real goal is making a controlled space without the host realizing it's being controlled. Mostly though I think she is just having some fun doing something she couldn't easily do in the real world.
