I've had one really good steak at a restaurant that made me sit back and think "oh now I get the whole steak thing". But I haven't been able to repeat the experience. Just been chasing the dragon

Steak even at expensive restaurants is really simple. There's only a couple things that make any difference. Prime grade for more fat and dry aging for more flavor. The dry aging is the big thing, if you go to a place that does it themselves, you're at least getting something unique they did out of the whole thing.

I cook about two filet mignons or hanger steaks a week on average. It only costs me $16 a piece. Steak is the laziest thing in the world to cook. Just put it on a hot pan. Just add butter. Takes ten minutes. Even cavemen can do this

I watched a whole 3 minute video where Gordon Ramsey tells you to put salt on the steak and let it sit there a while before you cook it. I did everything he said and I couldn't tell any difference. I'm just not cut out for this. :marseycry:

If you want that to work, you need to salt it more like 12 hours in advance. If left long enough, salt will distribute itself all the way into a piece of meat, but it takes a long time. You also need to use more salt than you normally would if you want to notice it. I wouldn't bother with a steak unless I had a lot of time, though. It's more important with thick pieces of meat like a pork shoulder or even a chicken breast where the stuff in the middle won't benefit from surface seasoning and can come out bland.

Medium rare is a meme, it means nothing. Medium means MEDIUM. That's half way between rare and well done. Which means pink in the middle with a nice browning on the exterior. If you like juicy you go rare, if like it with strong flavor you go well, if you like a balance you go medium. have you ever heard someone order a medium well? No you haven't because it hasn't been shilled. I swear it has to go back to some movie or something that made it popular, like people that ask for a shaken martini.

I like my food cooked all the way through, you don't see these blue steak r-slurs demanding a pizza where the cheese is cold and unmelted in the middle.

You've been tricked into accepting badly cooked food, if they took the time to cook it slower it would be evenly cooked all the way through without the outside going dry, they just want to get you out the restaurant as fast as possible so they've convinced people to eat rushed steak.
