that looks so good bussy!!! i love lemon and lime sweets so much, i'm so jealous of you rn. you ever make lemon bars? this really simple recipe on allrecipes is so good imo https://www.allrecipes.com/recipe/10294/the-best-lemon-bars/ add a little salt and maybe a little extra lemon (or lemon extract if you have) they're soo dangerous to have around :marseyobese:

These are the recipes I followed for the key lime cheesecake-

I used this for the crust and cheesecake (almond flour and graham cracker for the crust is really good) - https://www.mybakingaddiction.com/lemon-cheesecake/

  • substituted key lime whenever it called for lemon

  • used 2 teaspoons of key lime zest

  • I did not wrap the springform pan in tinfoil to prevent leaking in the water bath because I think that method is r-slurred and doesn't work (at least for me), so I put the 9 inch springform in a slightly larger 10 inch (and 3 inches tall) cake pan in the water bath as shown in this video -

tysm i am so excited to try this one out! i went to florida recently and did not expect to enjoy real key lime stuff so much, really is so different than what we pass off as key lime pie in leafistan

god i feel this so hard, my mom is a really talented baker and cuts these perfect linings with parchment paper and i just... cannot. thank you so much for including that method lol

No problem! The cheesecake turns out great doing that and no dealing with leaky tinfoil bullshit :marseythumbsup:

One more thing with the recipe. After making the cheesecake part, I let it cool as directed and then put it in fridge for an hour or two before putting the curd on. After the curd is on, I put it in fridge overnight to make sure it's set and all that and do the meringue the next day.
