Iirc it was called patagonian toothfish and was a bycatch originally. They pretty much rebranded it to a nicer name and marketed in north america as a delicacy.

Thats your problem. Real sea bass tastes like straight butter and is melt in your mouth. If that shit didn't cost $30 a lb it aint real Chilean sea bass
