To be fair I think I might get different results because I made it so you can only choose one, and left off foods that have more than egg in them. Omelets and Deviled eggs are outside the scope of my current research.

I usually do scrambled just bc it's super easy to scramble them w/ some onions and peppers, and it's also absurdly forgiving (if you overcook or undercook scrambled eggs you're legit r-slurred)

I put "fried (flipped)" but I have developed my own way of simulating over easy without the risk of breaking that beautiful soft yolk.

I crack the eggs into a small pan over medium heat and immediately cover with a lid. This traps the heat and partially cooks the top of the eggs without having to flip them.

I hate to break it to you, but that's LITERALLY the exact method some people use for cooking a sunny side up (unflipped) egg

The point of flipping it is you get your fat/oil on both sides and seal everything in nicely while keeping both side consistently cooked. You don't get that seared flavor on the top side if you just steam it.

If you're working on a properly greased surface on high enough heat, the chance of yolk breakage mid-flip is less than 10%. In my experience even if there is a leak, it usually seals itself quickly while cooking, preserving at least 50% of your total yolk. Worst case scenario you have to pull the egg early and have a little runny white in your yolk.

yeah that's how I usually do it too, imo not flipping and no lid means uncooked egg whites, and I'm not a fan of that

i crack the egg into a searing hot pan with a good amount of oil and then spoon the hot oil over the white until its cooked, and i dont flip it

To perfectly poach an egg, every time:

  • use the freshest eggs you have

  • use a mesh strainer to separate the watery part of the egg whites

  • dump the eggs in a ramekin or small bowl

  • ensure that (at least) 4 inches of water will cover the eggs

  • add 3-4 Tbsp of vinegar to the water (don't worry, it takes a lot of vinegar to impart flavor)

The Business

  1. Bring water to a full boil and turn off stove top

  2. Gently tip and submerge the container holding the eggs

  3. Cover your pot and let sit for 3.5 - 4 minutes for easy or 4 - 4.5 minutes for medium. Any more than that and you should die.

  4. Scoop out the eggs with a slotted spoon and gently tip onto a paper towel lined plate

  5. Dab up some excess water and plate them however you like

Should do a bacon poll too. I like squishy bacon (hate crispy) but that tends to be a controversial opinion.
