I've read the research articles that seed oil schizos commonly link to, and it's actually hard to come to a conclusion about them, though mostly by virtue of the fact that nutrition research is absolute garbage and anybody with an agenda can easily design a study that gives them the findings they want.

I mostly cook in olive oil because it's tastee
but most of my fat comes from animal sources
I even have a big butt slab of frozen bacon grease in my freezer but I rarely cook with that

They degrade at a much higher rate than avocado and olive oil. Leads to more heart disease and cancer. America's obesity rates basically mirror seed oil usage rates. The world was a healthier place when we cooked everything in lard and butter.

Free radicals are a part of redox molecules and can become harmful to the human body if they do not reattach to the redox molecule or an antioxidant. Unsatisfied free radicals can spur the mutation of cells they encounter and are, thus, causes of cancer.

Seed oils breakdown into bad little molecules when exposed to the environment much faster than olive/avocado oils. Those bad little molecules can affect ur good cells when ingested and make them go haywire and turn into cancer.

I'm not smart enough to explain the science, but something about seed oils and light/heat causes the molecules to change into free radicals. Really all I need to do is look at pictures of my grandparents' grandparents and parents to know how much healthier they ate when they were frying all their meals in lard.
