You can get meat really cheap in the US if you buy whole cuts and cut them yourself. I got a hole strip loin of beef for like 10.99 a pound at a chef supply place. But you have to hope those are close to you though. It's expensive if you buy it at a regular grocer.

That's my go to steak meal. Add a bit of white grilled onions to put the steak on top of so you get some onion drenched in steak juice when you eat the steak and it's even better.
It varies, fire roasted onions can be super delicious. But it sounded like you were grilling (charring) onions weirdly but caramelizing them is supposed to take a good hour or more. I was just wondering since you brought up how long it took
If you're dead set on cooking them on the grill I'd peel them by layer and then slice those peels into mostly straight pieces then a quick char on both sides of each slice. Or you can do a full onion char and then peel back the char for a moist hot onion but that's more like steaming it
