Sesame's flavor is not very heat tolerant. It's why it's used as a finishing oil and in general id suggest you go with a higher heat for a better sear, then finish with seeds.
I don't see a lot of color. I think maybe you can finish it with a blowtorch if you want it extra raw. Sesame seed encrusted stuff is often done after the initial cook.

I'll have to keep that in mind next time i cook some.
