I grated my the cheese carefully. Shucked some garlic and thought about it, but decided not to. Added some kewpie mayo, shredded swiss, and canned corn to the frying pan on top of the shredded chedder. I was ready. Then it happened.
It's overwhelmingly oil. A single yolk can emulsify up to about two cups of oil. I usually go slightly more conservative to build a stronger emulsion, though.
Yes, to spread on the outside of the bread before browning it in the pan. The thickness of mayo makes it easy to get that even, crunchy, golden crust on the outside.

I'd never considered this but mayo is just egg and oil there's not reason not to.
