The hollandaise is way too thin and runny. You also flooded the plate with it which doesn't look as aesthetically pleasing or as appetizing. Your garnish is cut way too thick and placed somewhat sporadically. The ham is actually not too bad. The problem is more with the type of bread you chose, I understand you don't like english muffin but darn. You should use some hardier bread than just white bread and it looks under-toasted. Ideally if you don't like english muffins, you could use a scone or an american style biscuit. All in all 4/10.

Honestly the richness of an eggs benedict needs the yeasty sourness to help cut through the yolk and the hollandaise. It just isn't as balanced of a flavor profile without imho.

I just never cared for English muffins and my favorite diner here uses the save bread. They also use kielbasa instead of Canadian bacon (I like both) and add a pierogi as well.

I'll cop to fricking up the hollandaise sauce to an extent but eating it was still on point (besides being slight over salted)

Try this approach next time. Comes out perfect and you don't need to worry about scrambling the eggs. I think you want to use 2 yolks even though they call for one in the recipe though.

I've used this recipe before as a template, you have to be careful, so it's nice to have someone else to poach the egg, toast/English muffins, and cook your meat of choice. You can really taste the absurd amount of calories and really appreciate all the different simple elements when done right for benedict
