Fun fact: Samurai never used two katanas. They carried a katana or tachi long sword and shorter wakizashi. This pairing was known as the daisho. Even then, the two swords were rarely used together, with the long sword being used for duels and open combat and the short sword being carried as a general sidesword, much like a rapier in Europe. The wakizashi was also used for ritual suicide.

I think there was precisely one guy (Musashi) who ever used two swords together at a notable level of skill and even then, he used the wakizashi like a Euro swordsman would use a parrying dagger. As badass as dual wielding is in fiction, it's impractical in reality.
