I like Genshin's art style and play literally just to explore and look at anime girls while I have woman crying ASMR / detailed true crime playing in the background.
For the cost it's a live service game with like a 66 million active players and they have to optimize that shit to run on even on phone. My ~2018ish released laptop with a GTX 1050 can run it, tho it takes a bit of space.
Plus they add like a new region that's fairly large every about half a year with a fair number of pretty good quests and hidden chests all over. It's fun just climbing up a mountain and finding like three chests of gear and then flying around to get to the bottom

My friends and I had a blast getting drunk and playing Content Warning. Before that it was basically the same with Lethal Company or Phasmophobia.
Stepping away from that genre, Pico Park was also really fun, and couldn't have cost more than $50k total to make. (Okay okay maybe $200k depending on who they hired I guess.)
Terraria is also really fun. It has a ton of content at this point so probably had a larger team at some point during development but even the old versions were really fun (back when the Wall of Flesh was the final boss) and I doubt the team was that large for them.

I was just checking Cyberpunk with the photorealism mod and I realize that the GTA VI game would have to invest in two key areas to beat Cyberpunk 2077 as the default go to open world game to impress the world.
1. Better movement animations
2. More interactive environments and game physics
