The PS1 had a bunch of good JRPGs, Fighting
Games, and Metal 
Gear Solid. You're probably not looking 
to play arcade mode in some street 
fighter 
alpha 
game on your emulator, so I'd check 
out:
Vagrant Story
SaGa Frontier
Legend of Dragoon
Final Fantasy

Metal Gear Solid
Vagrant Story
is really 
unique so that's probably my biggest recommendation. The recent SaGa Frontier 
remaster is a fair bit better 
than the original too but if you can play the OG for free it's a pretty 
great 
game despite 
all of it's jank.
