India has two unrelated language families, Indo-Aryan and Dravidian, but all Chinese languages are genetically related. Anyway, Hui people mostly live in Mandarin-speaking regions, so they do speak "Chinese" in the narrow sense.

Widely believed, but not actually true. Different Sinitic (Chinese) languages have evolved different vocabulary and grammar, so if written down, they would not be the same.
It is true that China has a common written language, but this is because everyone learns to read and write Standard Chinese, which is basically Mandarin. Because of this, most Sinitic languages don't even have a written form. Cantonese is a notable exception, and it has a bunch of characters not used in Standard Chinese.
Written Taiwanese is interesting, because there are words that don't have Chinese characters, so they write with a mix of Chinese characters and Latin letters. But most of the time people in Taiwan just write in Standard Chinese.
Historically, everyone just wrote in Classical Chinese, even though spoken languages had all diverged dramatically from it, which is why many Sinitic languages don't even have a written form.
