Because unlike in ye olden days, where being able to get fat was a measure of success, stuffing your face 24/7 in an industrialized society is a pretty easy thing to do. Thus, being unable to keep oneself at a healthy fricking weight is a sign of poor willpower/psychological ability and is indeed generally considered unattractive.

I recently had a conversation with my boyfriend about this, because I couldn't get past the idea that my being fat meant I was ugly. We were talking about physical preference in partners, and he told me my size wasn't attractive to him. BUT he found me very attractive. He loves my eyes, my hair, my nose, my height, even my ears lol. There were a ton of attributes that made me attractive to him, and only one that wasn't attractive.

Fat bodies, became associated with, poorer, less educated, darker skinned people who had less education and (were presumed to have) less control of their appetites and sexuality. Thinness became associated with more educated women, who were (presumed to have) better control of their appetites and sexuality.

Considering children seem to have an instinct to fear or make fun of fat people, I think it has a foundation in biology and is only reinforced by interactions during life.
