If you haven't tried it, smoke them home fries up in some cast iron for about an hour. I'll throw it on the pit for the last hour or so of water I'm smokin.

I do a big thing up every bbq and it's a real crowd pleaser.

Sometimes I save the rendered fat for shit like that. These days I generally don't eat the pork straight away, too much shit going on with the kids. I just do a shoulder every other month, stash it and make shit like tamales or bierocks for easy meals between baseball and soccer.
