Pie crust recipe

I have never found a good pie crust recipe. They always are either not structurally sound (too little water) or bad tasting (not flakey, too much water?). How does /ck/ /h/food do theirs?

I've only ever heard of blind baking pies with fillings that don't need to be cooked, like creams. Do you do it with things like fruit pies as well?

Are you keeping the butter, shortening, water cold enough? And have you tried using some vodka? Vodka helps with flakiness because it evaporates more quickly than water. I also blind bake crust

I generally keep the shortening I use in the freezer and the water with ice, but I may just take too long handling it. I've heard of using vodka before but never tried it - I'll give it a shot.
