Pie crust recipe
I have never found a good pie crust recipe. They always are either not structurally sound (too little water) or bad tasting (not flakey, too much water?). How does /ck//h/food do theirs?
Are you keeping the butter, shortening, water cold enough? And have you tried using some vodka? Vodka helps with flakiness because it evaporates more quickly than water. I also blind bake crust
I generally keep the shortening I use in the freezer and the water with ice, but I may just take too long handling it. I've heard of using vodka before but never tried it - I'll give it a shot.

I've only ever heard of blind baking pies with fillings that don't need to be cooked, like creams. Do you do it with things like fruit pies as well?
