Hey! So I cook 90% of everythjng on my black stone. Smash burgers of course. Bulk chicken breast. Fried rice. Homemade tortillas. Just recently started making neopolitan style pizza on it… it works. Terryiki chicken. Uhhhhh I'll add more if I think of it.

We broke it in with some steaks, but recently made birria in the instant pot then making tacos on the blackstone. Turned out amazing, highly recommend.

Omg those look amazing. I make a bunch of chicken tacos and atick them in the freezer for easy meals. Gotta do birria! I've made birria empanadas before but that doesn't include the blackstone.
For smash burgers I've learned they need to be paper thin. The best way I've done for maximum thinness is by using a tortilla press on the Pattie's, layering them with parchment paper, freezing them, and then cooking them from frozen on the preheated blackstone. It's a lot of work though. Pressing it on the stone itself while it cooks is fine too. Another method is making them as thin as you can prepping, and then making holes in the patty so it looks like a domino. The holes help the patty not shrink as much, and just press press press with the flipper. I don't have the burger setup blackstone sells, but my husband uses a little cast iron to press on the stone itself. Your arms get splattered with grease that way though. Hope this helps!

It looks pretty good, I'm surprised that worked at all. I tried using a smoke box like that on a regular gas grill a while back and didn't get much out of it. Not sure why people are complaining about the mustard, I do that with dry rubs too.

I had to drill lots more holes in my smoke box to make it work. Some people say to soak the wood in water. Frick that, it works way better dry. Put it in when you are preheating your gas grill to get things nice and smoky. You really need bigger cuts that cook long enough to get a mild smoky flavor. Something that cooks fast like shrimp probably aren't going to get a Smokey flavor

So I actually cooked this on top of a cooling rack, on the flat top, with only the 4th burner on the wood chips, and for a little while the smallest flame on the first burner. The brisket was never on top of a flame. It was raised slightly and never over the burners that were on.

I'm suspicious that most of the cooking was done from heat spreading through the cooking surface and then radiating into the meat, not the smoke. This can happen even if the meat isn't touching the surface, though you are right, this is indirect heat.

a piece of meat on a raised mesh, above a heat spreader, above flames is pretty darn indirect compared to 'grilling' (meat being directly exposed to flames)
