Most ubisoft games still sell well despite being of the most criticised in gaming, this is usually because Ubislop is very normie gaymer oriented who play maybe 2-3 games a year,
so they are the type not to get involved with culture war shenanigans, let's see if fun comes from this!

AC1 is neat if you can appreciate noughties repetitiveness/jank
AC2 and Brotherhood have decent stories and are still kinda fun, but much smaller than modern games. The Ezio trilogy comes with those (and frick it you can play Rev too)
Rogue is the same kino gameplay as Black Flag

Ezio trilogy is good but I don't think it has the same impact now as it had when it released.
The ending of Christina memories in AC:B is still the only moment where a bideo game ever 'got to me', kudos to whoever came up with those.
