Okay, so on the title. Brasil is known for being a very violent country. Outsiders don't know why exactly, they usually spout some dumb reasons, but it's a fact that Brasil is indeed violent. And what do workers hate more than anything? Working their asses off to buy an overpriced phone only to have it stolen by the ''youth''. The thing they say about São Paulo is, people are too "busy" to be welcoming like everywhere else. But a lot of that is related to the fact São Paulo is FULL of migrants, specially from the northeast region, and like, Bahia specially has a stereotype of people being "slow" (doing things at their own pace, being calm instead of stressed messes) and São Paulo is kinda the city where people work hard, like the "Japanese workaholic businessmen" (which, considering it's also the city with the biggest Japanese immigration in the world, to the point it has a "Japan Town" in place of a "China Town" and people call any Asian person "Japanese" cause it's just assumed anyone Asian is Japanese, and usually they are, makes sense). So specially with this contrast, between other regions having that "Brazilian warmth/calmness" and São Paulo being full of stressed messy bitches that overwork themselves, there is something like a stereotype. But usually people say "people are busy/have no time" instead of "work hard" and the negative comes from the part of "and therefore aren't as welcoming to everyone else", not on the work itself? If that makes sense

This is going to be a pretty ignorant question, but where’s the best place to go if I want to experience Brazilian culture? From my experience with Brazilians, my perception of “Brazilian culture” is people with very calm, relaxed, and easy going personalities coupled with some great food (rice beans steak and some cheese bread please), and a close proximity to jungles and beaches. Bahia seems kind of cool…
Also, how bad is it not knowing Portuguese? I can speak English and B1 level Spanish (I’ve used it in various Latin American countries where nobody speaks English).

Honestly it's kinda hard to say what's ''brazilian culture'', because Brazil is enormous and culture vastly differs from North to South, from East to West. With that said, there are things that are unquestionably Brazilian.
You'll find this pretty much everywhere, there's only a single city that is infamous for having people being cold, unwelcoming and sometimes rude, and thats Curitiba-Paraná. Even if the people there are less than your average warm brazilian welcome, it's still a beautiful place and worth a visit.
If there is one thing that makes this country worth it is the food. The south is known for their churrasco. The best cheese bread is in Minas Gerais, Southeast. Northeast also has some good foods but they're not for everyone and sometimes a bit obscure. North usually has distinct Fish dishes. All in all, wherever you go you'll be able to try out brazilian cuisine, even if it isnt South churrasco or Minas cheesebread, so I wouldn't worry too much with that.
If you want beaches Northeast is a no brainer. But beware, it can get hot in there. Not sure what kind of temperature you're used to, but for example where I live 28-30c is the average, ramping up to ~38c+ when it gets hot, although I don't live in NE. Jungles are more of a North thing, but we don't have beaches.
You should probably visit with someone who knows Portuguese then. It will also help with people trying to scam you
Would not recommend going by yourself but it probably won't be the worst thing ever, think you'd be fine. Usually brazilians speak spanish, even if just a little.

Bahia is 100% going to scratch your Brazil itch, at least the gringo's perception of Brazil and it's marginally better than Rio at least
The south is probably the least Brazilian part of Brazil, but a gaucho churrasco is the greatest food in the world, costela de chão is
I don't recommend Sao Paulo at all, if you are a gringo, just visit any globohomo city like NYC or London and that's the same with less crime
I like Manaus a lot, the fish and fruit they got there is godly and seeing the Amazon river is awe inspiring ngl
