In terms of game theory, Palestinians should demand as many of their people back as they can expect to get. Is there a reason to believe Israel willingly offers more prisoners to exchange than Palestinians would accept? Are there compelling theories about what Israel could have offered and still succeeded in a deal?

Game theory would also stipulate that the Israeli's absolutely should offer no more than 5-10 prisoners in exchange for Israeli hostages irrespective of whether the deal goes through or not. The fact that they release an r-sluredly high number of prisoners per hostage suggests that they are not behaving optimally which indicates cultural bias.

I am not claiming that Israeli trades are optimal, just curious why they're assumed to not be. The whole "Hamas doesn't want Israel to even exist" aspect is quite different from an exchange between, say, the US and Russia. It's hard to use global norms around nations and sovereignty when they fall apart in the middle east.

If you wanna really game theory it the only real optimal solution would be to bomb the entirety of Gaza until not a single soul was left alive, then have the Israeli PM who did that kill himself and his cabinet. Followed by criminalizing his party and the rest of Israeli's actively declaring him a failure and spitting on his name. If the other middle eastern countries still attack you then the liberal Israeli's that remain are just acting out in self defense because the Jewish leadership and political movement that caused the suffering has been exterminated from within. Then the Israeli's could do a Germany and spend the next 60-100 years talking about how sorry they are about all the Gazans that were exterminated as the world ends up forgetting the memory of their deeds once enough time has passed.

We are all the currency of the elite. That part hasn't changed so far till date. All you need to do to be reminded of it is to see the difference between how fast laws are changed when a commoner dies vs when the powerful suffer.
There are no moral bounds in geopolitics, only the understanding through harsh lessons of history as to what levels of violence would result in negative outcomes.
In the end morality is what works and what works is what brings home the highest gains and survives.
Israel doesn't exterminate gaza because they cannot get away with exterminating gaza, whether due to the morality of the common Israeli or via international pressure.
