Also I'm pretty sure in most places with ballots custom is for representatives of all parties to be present at the counting lol. No one is counting votes in some backroom alone.

We don't have ballots anymore but all party reps do check the EVMs before vote tallying begins.
My father was on election duty a few times in the 90s when he was posted in the districts, from his stories it was heck before computerization. They'd sit at their desks for two straight days, no sleep and minimal eating breaks at the table itself as all the party reps constantly engaged in shenanigans.
