I get kind of annoyed at how the neapolitan pizzas have trended towards having these excessively large and fluffy crusts, it's almost like a parody of itself, like not even THE neapolitan pizza spots dont make it like that

This is very true, I lived in Naples for a year and the pizzas there almost never have the exaggerated puffy crust. Also a much wider range of toppings than what you get in "Neapolitan" pizzerias in other countries
