Just eating small amounts of food can be r-slurred if they’re calorically dense.
Morons constantly recommend peanut butter and bananas as a diet food. Peanut butter is 200 calories for 2 tablespoons, that’s 10% of your nominal 2000 calorie a day diet. People eat way more than 2 tablespoons at a time, and bananas are one of the highest calorie fruits around (taste like shit too).
Store bough protein bars, and other “health foods” can give you absurdly low amounts of food in volume for ridiculously high amounts of calories.
You should absolutely count calories, even if you’re just eating small amounts of food. At the very least for an actual idea for how many calories you actually consume if you ever want to actually get shredded. It’s all just math.

I used to find counting calories useful by treating it like a budget, which was helpful for discipline. Feeling a little bit hungry, but are you really feeling > 100 calories over TDEE hungry? Answer is usually no.

Carbs aren’t triggering hunger in people, or making their body “cling to fat.”
People build this type of appetite from terrible lifestyle choices, eating out of boredom, and just being a degenerate.
Ghrelin can be a b-word when you’re on an actual cut, that when you’d prioritize protein dense foods that fit within your caloric budget, protein is physically more satiating. That’s the only indirect knock on carbs I can think of.
Most lardbuckets trying to lose weight constantly try to blame carbs instead of the massive amount of calories they eat everyday. 3500 calories in a pound of fat, know your actual TDEE and eat a small to moderate deficit. Average person will lose 3-4 pounds a month easily doing that.

I just recently learned about different calories being worse for you and wanted to share. Apparently even if you're not fat excess fructose consumption can cause major health problems down the line.
Since you're vegan you probably don't have to worry this, apparently fiber helps counteracts the bad shit from fructose and you probably eat a shit ton of fiber with all your veggies.
