Quiches are a type of tart, which have thicker crusts and shallower filling so that they stand alone outside their dish. They also use pastry dough as the crust which is more crumbly. Pies are taller with sloped thinner sides that are served directly from the dish and their crust is tougher. Quiches are also mostly egg with some filling. While this uses egg as a binder, it's mostly cream and goat cheese. A savory custard with filling, its as much a quiche as a lemon pie.
Take a pound of goat cheese, about a cup of cream, and 5 egg yolks and mix it in a bowl. Little bit of basil, thyme, oregano, marjoram and just a bit of red pepper flakes.
Saute onion, then add very coarsely chopped Spinach and cooked it just enough to wilt it. Let it sit for a minute and squeeze out the excess juices. Throw it in the bowl.
Take artichoke hearts and squish the base between your finger to seperate them into the individual layers and throw them in the bowl.
Chop some not crispy bacon up and put about half into the bowl and set half aside.
Fold the mixture together and pour it into a pie crust. Sprinkle the rest of the bacon on top.
Bake on 400 till its set but not quite done, should be about 30-40 min, then back off down to 350 or so for another 10-15 minutes till its solid. Let it cool a bit to firm up before serving it.
