It takes years to get good at farming.
If you run out of male gigolos in a war society still runs. If you run out of experienced farmers lots of someones are going to be starving to death.
Farming is one of those few jobs that military will try to actively avoid taking during a war with conscription unless a whole load of other jobs are dead before they reach that group.
Pretty sure even during WW2 farmers were some of the last groups to be conscripted but don't take my word for it I heard it from another commentator.
