Here's another lazy recipe for ya:

  • 5 lbs boneless chicken breast

  • 2 jars of salsa

  • 1 bunch of cilantro

  • whatever spices you like (I use some thyme, paprika, cumin, garlic powder and red chili pepper)

Throw it all in the slow cooker before work, turn to low, come home and it's hot and ready for dinner. Fry up some corn tortillas, shred some cheese and put on top while they're on the stove. Apply meat and salt and pepper to taste!

Never understood why people use chicken breasts (especially boneless) in slow cookers.

They have low fat and no flavor.

Legs/Thighs are objectively the best, but for some reason poors always default to boneless breasts (cause they don't know better).

At least get a bone-in breast if you can't just do it right.

I used to make this often - throw :marseybrick: in a can of corn and black :marseyfriedchicken: beans :marseybutt2: at the end and it's two weeks :marseysal: worth of burritos :marseylickinglips:

(i only used about 2 lbs of chicken :marseyblackcock: and one jar of salsa so your recipe is an entire month of burritos - which work well in the freezer)

hijacking to post my lazy recipe

2-3 lb beef roast (pick something on clearance - I prefer lean stuff, but chuck :marseyroxsneed: roast works fine)

1 jar sliced peperoncinis

3-4 tbsp minced garlic

1 pack achiote (optional)

cut beef roast into 1-1.5 inch cubes

add garlic and achiote block

dump peperoncini jar over roast

  • if slow cooker or dutch :marseycheemsdog: oven: cook on low for ~7-8 hours

  • if instant pot, cook for an hour

serve over mashed potaties or on crusty bread :marseyfrenchitsover2: for sandwiches.

I'd assume any mild-medium jarred peppers would work, something with a bit more kick than a banana pepper.

Banana Split recipe
