Ever since I started doing One Meal a Day to skinnymaxx during NNN, I find it especially important to prep my meals to avoid temptation. Yesterday, I almost ordered a slice of pizza. I know—how fricking shameful of me. Thankfully, I came to my senses and ate some lean chicken instead.
This week, I set out to meal-prep a salmon dish to cover 5 whole days of meals. I've never saved this much money and looked this good c:
Ingredients:
1.5 kilos of salmon
Zest of 1 lime and 1 orange (or two if you over-zest the first one like I did 😭)
Juice of the same lime and orange
Olive oil, salt, and garlic
Fresh garlic, a tablespoon of honey, and lots of chili flakes for that sweet, spicy kick
Side: Quinoa (1 cup), cherry tomatoes, onions, bell peppers—basically any veggie that's cheap and you like
I started by zesting a lime and an orange…or at least, I thought I was zesting. Turns out you don't want the white part because it's bitter. Go figure. I saved those two naked fruits for their juice and started over.
I mixed the zest with olive oil, salt, thinly sliced garlic, chili, and honey, then rubbed the salmon with this mix, aiming for a sweet and spicy glaze. I squeezed fresh lime and orange juice over the salmon, then randomly sprinkled a bit of soy sauce while it was cooking.
Bake it. Easy. I have, like, 30 thermometers now because I've burned weed about 10 times and lost a shit ton of money that way.
Quinoa? Made it.

I personally think Texas chili is overrated so I decided to put my own spin on the dish.
I call it Spinach Chili. It is a very simple recipe.
One can of kroger chili
One bag of frozen spinach (u can put any frozen vegetables u want in there though, they all thaw just fine in the chili)
I threw in some rosemary crackers but they are optional. also add them in after it cooks, i regret cooking it with the crackers inside now
throw it all in a pot and cook on the stove until the vegetables are thawed and the chili bubbles a little
And there u have it. god tier macros and 4 servings of vegetables for around two bucks and 700 calories. also takes 10 minutes to make. Welcome to civilization Texas.

110 calories, 28g fiber, and 10g protein in a fricking burrito sized tortilla is insane. And they don't taste weird, they taste like a normal tortilla. If you put one side by side with a regular tortilla I'm not convinced I would be able to tell the difference.

Realized I need to buy a citrus press, as squeezing twenty limes by hand was annoyingly time consuming.
Monkfish and red snapper for the protein. Julienned pickled onions, sweet potatoes, celery, and roasted hominy.
Had the fish in lime juice for 40 minutes, was getting too many bitter notes, so added sugar and clam juice and let go for another 20.

A broken McDonald's McFlurry machine, arguably one of life's greatest nuisances, has finally been solved thanks to a court ruling.
McDonald's franchises haven't been able to fix the soft serve ice cream machines on their own because manufacturing company Taylor owns the copyright and exclusive rights to fix the machines — until now.
The United States Copyright Office granted a copyright exemption last week that gives restaurants the "right to repair" the machines by bypassing the digital locks that prevented them from being fixed. The inability to make timely fixes has been a bane of the customers' existence, so much so, that there's a third-party website called McBroken.com that tracks their availability.
The exemption, which goes into effect Monday, was requested by advocacy group Public Knowledge and repairs website iFixIt to allow third parties to circumvent digital locks on the machines for repairs. Although the full request wasn't granted, commercial restaurant equipment received a narrow exemption.
Public Knowledge and iFixIt teamed together on the issue after the latter group broke apart an ice cream machine and found "lots of easily replaceable parts."
The decision will lead to an "overdue shake-up of the commercial food prep industry," according to Meredith Rose, senior policy counsel at Public Knowledge.
"There's nothing vanilla about this victory; an exemption for retail-level commercial food preparation equipment will spark a flurry of third-party repair activity and enable businesses to better serve their customers," Rose said in a statement.
McDonald's and Taylor didn't immediately respond to CNN's request for comment.
Broken ice cream machines have been such a blemish on McDonald's reputation that even competitors mock them for it. And perhaps a fix can't come quick enough: Nearly 15% of ice cream machines are broken as of Monday, according to McBroken.
